Sinful Carrot Cake with Cream Cheese Frosting

This is a recipe for a delectable, moist, sweet, sinful carrot cake with freshly grated carrots, coconut, walnuts, and best of all...LOVE. Ingredients
- Pans:
- 1 tbs. oil for each pan (3)
- 1 tbs. flour for each pan (3)
- Carrot Cake:
- 2 cups all purpose flour
- 2 cups granulated sugar
- 3 tsp. cinnamon
- 2 tsp. baking soda
- 1 tsp. salt
- 1-1/2 cups oil
- 4 large eggs
- 2 tbs. half and half
- 3 cups grated carrots
- 1 cup shredded coconut
- 1 cup chopped walnuts
- Frosting:
- 16 oz. cream cheese, softened
- 1/2 cup un salted butter, softened
- 3-1/2 cups confectioners sugar
- 1 tsp. vanilla extract

Preparation
Step 1
Preheat the oven to 350 degrees and grease and flour 3 9 inch round cake pans.
Step 2

In a large bowl, mix the flour, sugar, cinnamon, baking soda, and salt with a mixer on low speed.
Step 3

Mix the oil and eggs in with the dry ingredients on high speed with the mixer, ensuring that they are completely dissolved in the batter. Add the half and half and completely mix in.
Step 4

Add the carrots, coconut, and walnut to the batter. Mix them in together for about 39 seconds on high speed with the mixer.
Step 5

Pour the batter in even amounts into the 3 greased and floured round cake pans. Make sure to alleviate and release any air bubbles from the cake by dropping each pan about an inch or two above the counter.
Step 6

Put each of the cake pans into the 350 degree heated oven, and let bake for about 30 minutes, or until golden brown. Afterwards, let the cakes sit for about 85 minutes or until they are no longer warm.
Step 7

Mix the cream cheese, confectioners sugar, butter, and vanilla in a medium sized bowl with a mixer on medium speed until the mixture becomes soft, creamy, and whipped like frosting.
Step 8

When the cakes cool, frost one and stack the others on top (with frosting in between each layer). Garnish the cake with coconut and chopped walnuts. Cut, serve, and enjoy.
