Better Than Take-Out Chick & Shrimp Pad Thai

Ingredients

  • 1/2 package wide rice noodles (choose width you prefer)
  • 1 boneless skinless chicken breast, diced
  • 3/4-1 cup defrosted pre-cooked shrimp
  • 1 heaping cup of sliced carrots (julienned)
  • 1/2 cup sweet red pepper, sliced (julienned)
  • 3 cloves garlic, minced
  • 1 tbsp minced gingerroot or powder
  • 2 heaping cups bean sprouts
  • 1 tbsp+1 tsp olive oil
  • 2 eggs, lightly beaten (can be used as optional mix-in for those not allergic :)
  • 2 green onions, sliced
  • ¼ cup chopped unsalted peanuts
  • 2/3 cup chicken stock
  • 1/2 cup ketchup
  • 1/4 cup fish sauce or oyster sauce
  • 2 tbsp granulated sugar
  • 2 tbsp cornstarch
  • 1 tsp grated lime rind
  • 2 tbsp lime juice
  • 1-2 tsp siracha

Preparation

Step 1

In large bowl, soak noodles in warm water for about 20 minutes; drain and set aside. Drizzle 1 tsp olive oil over noodles and mix through to prevent sticking. (Also helps to finish cooking later.

Step 2

Fry up two scrambled eggs in wok (break up into very small pieces). Remove to bowl when finished.

Step 3

Meanwhile, in small bowl, whisk together stock, ketchup, fish sauce, sugar, cornstarch, lime rind and juice and hot pepper sauce; set aside.

Step 4

Heat 1 tbsp oil. Brown chicken, over medium-high heat. Throw in shrimp for last few minutes (assuming precooked and defrosted) and half of minced garlic. Add salt and pepper to taste. When cooked through, transfer to bowl.

Step 5

Add carrots, red pepper, rest of garlic, and ginger to pan; cook until slightly tender. Add noodles and stir gently for a couple minutes.

Step 6

Return chicken and shrimp to pan. Stir sauce and pour half into pan. mix through and keep adding sauce until you reach desired consistency (I used a little over 3/4). Sit aside if any left and you can add more later if desired.

Step 7

Cook, stirring, for 5-6 minutes or until thickened and noodles are tender.

Step 8

Add bean sprouts and eggs to noodles; toss gently for 2-3 minute or until heated through.

Step 9

Serve sprinkled with green onions and peanuts.
