Ingredients

  • 2 chicken breasts cubed
  • Flour to dredge
  • 3/4 cup flour
  • 1/4 cup cornstarch
  • 1/2 tsp salt
  • 3/4 cup water
  • 1 1/2 tsp baking powder
  • 1/2 tsp vegetable oil

Preparation

Step 1

Rinse chicken under cold water and pat dry. Heat deep fryer full of oil

Step 2

Mix together all ingredients except flour to dredge. Dredge the chicken pieces in flour adding more as necessary. Dip chicken pieces one at a time into batter mix and put into hot oil. Fry 4 to 6 pieces at a time. Fry until golden brown

These can be made ahead of time and then refrigerated after frying, just rewarm in the oven. The batter can be used on other types of meat as well
