Ingredients

  • Crust:
  • 1 cup almonds
  • 1 cup walnuts
  • 1 cup dates
  • 1 TBSP coconut oil
  • Apple Filling:
  • 5 medium apples
  • 1 TBSP coconut oil
  • 1 tsp cinnamon
  • 1 TBSP maple syrup
  • Crumble:
  • ½ cup almonds
  • ½ cup walnuts
  • 2 TBSP maple syrup
  • ½ tsp cinnamon
  • Cashew Cream:
  • 1 cup cashews (soaked for an hour if possible, but not necessary)
  • 2 TBSP maple syrup
  • 1 tsp vanilla extract
  • ¼-1/2 cup water (depending on consistency)

Preparation

Step 1

To make the crust: blend 1 cup of almonds and 1 cup of walnuts in a food processor until it's a fine powder. Add the dates to the processor one by one while it's still on, and then drizzle in the coconut oil.

Step 2

Take the crust out of the processor and transfer to a glass pan. Press firmly so that the crust sticks to the bottom, and then freeze for 30 minutes.

Step 3

To make the apple filling: heat 1 tablespoon of coconut oil on medium-low heat. Then add the sliced apples to the pan, along with the maple syrup and cinnamon. Cook the apples for about 10 minutes, until cooked but not mushy. Remove from pan and reserve.

Step 4

To make the crumble: add the ½ cup each of almonds/walnuts and the cinnamon to the food processor and pulse until a crumbly consistency. Add the maple syrup and pulse until mixed.

Step 5

Cover the crust with the apples, and top with the crumble mixture.

Step 6

For the cashew cream: simply blend the cashews in a food processor with some water until they become a creamy sauce. Add the vanilla and maple syrup and then mix once more to blend well.
