Italian Florentine Cookies

Ingredients

  • 2/3 cups flour
  • 1/4 cup sugar
  • 3 1/2 tbsp butter
  • 1 tablespoon cream
  • 2 1/3 tbsp honey
  • 4-5 oz almonds and/or hazelnuts
  • 3.5 oz chopped orange peel
  • 1/4 cup of cherries
  • 3.5 oz (generous 3/4 cup) chocolate

Preparation

Step 1

- Melt butter, cream, honey and sugar over low heat.
- Remove from heat & add flour, orange peel, almonds and/or hazelnuts & cherries coarsely chopped.

Step 2

- On a sheet of baking paper, place about a tablespoon of mixture, flatten. Keep repeating until you have used all of your mixture.
- Cook over low heat 6-8 minutes then let cool on rack.
- Meanwhile, melt the chocolate and drizzle over each cookie.
