Hello Nick, so tell us...


When did you begin your blog, and what inspired you to start it?


I started blogging almost six years ago! I had just moved in with my girlfriend (now wife) and wanted to learn to cook great meals for us. I started the blog because I'm a tech geek and also to keep myself honest!

How many hours per week do you spend on your blog?


Tough to say, but I would guess I spend 20 hours a week on it if you include photography, cooking, writing, responding to emails, and general admin work. It's essentially a part time job, but I love it!

Are you involved in the blogging community - how do you attract new readers?


Totally. I love chatting with other bloggers (food bloggers or otherwise). It's a great community.

I'm far from the best at attracting new readers. I rely a lot on word of mouth and search engines so people can find me.

What is your earliest food memory?


My mom used to make these little fried sandwiches with ham and cheese in them. She would make like 100 at a time and it would make our house smell like fried deliciousness for days. I've never really tried to reproduce them because I worry that they won't live up to the memory!

Which of your recipes would you suggest to readers for a perfect meal?


Well, perfect meal is pretty relative to who is eating it! For me, it doesn't get much better than my braised short ribs on homemade pasta. That recipe takes a solid afternoon of preparation though.

If you're looking for something a bit faster and more summer, I love these grilled white fish tacos I posted last month. They are great on a hot summer day and can be on the table in 30-45 minutes.

If you could be a contestant or guest on any cooking show what show would you choose?


Food Fighters, because hey... I'm going to be on it! I will be one of the home cooks competing against professional chefs.

Is there any dish, ingredient or type of food you refuse to cook?


Nothing that I can think of that I just flat out refuse to cook. There's plenty of stuff I suck at cooking though... like croissants... I've tried a bunch of times and can never get them right so I sort of refuse to try again unless I can get some expert help.

Who are your culinary idols?


I really like chefs that show realistic ways to make great meals at home. People like Jamie Oliver who inspire people to eat more at home and eat out less are fantastic.

What are your goals for your blog? Where would you like to see it in the next year? Five years?


Ha! I think one week at a time honestly. My goals are just to post more recipes and hopefully help more people get comfortable in their kitchen. I don't really have any income goals or anything.
