Hello Nibbles By Nic, so tell us...


What inspired you to start your blog, and what is the philosophy behind it?


I am a typical mother in her mid-thirties with two young kids on the go (always) who just wants a nutritious, yet fun meal in front of them as often as possible. My recipes are all done with my kids
around and often participating.

Has having children changed your approach to food?


yes! My children always seem to eat better meals when they are involved in the cooking! They especially love using my big red Kitchen Aid blender!!

Where do you find your culinary inspiration?


EVERYWHERE!!!! Farmer's Markets, Restaurants, every day life!

If you could be a contestant or guest on any cooking show what show would you choose?


I'd love to be the actual personality and host a show all about food & entertainment!

What is your earliest food memory?


My best friend, Claire, and I having our own cooking show called "Chef La La Mae!" Our specialty was Four Cheese English muffin pizza!

Do you have a secret ingredient, a product you use a lot that is unexpected or that helps you save time?


I am obsessed with my Nutri-Bullet Vitamix. Shakes, minced garlic, chopped onions….it is the BIGGEST time saver.

Is there any dish, ingredient or type of food you refuse to cook? Or anything that you refuse to eat?


I am repulsed by sun dried tomatoes! Sorry!

What are your goals for your blog? Where would you like to see it in the next year? Five years?


Always take better pictures! Gather more & more & more followers to nibble with! Release my Entertaining book in 2015 and host my own Foodie TV Show within the next 5 years.

My worst food flop was...


In college I made some type of casserole with canned mushrooms, string beans & I can't remember what else because it was so awful!!!!!

Anything else you would like to share?


I once served my Mother In law cilantro thinking it was parsley!! She has the BIGGEST aversion to Cilantro. Whoops!
