The perfect soup for the winter months
- 1 (1.35kg) whole chicken, cut into pieces
- 2 litres water
- 1 large onion, chopped
- 2 sticks celery with leaves, chopped
- 30g fresh parsley, chopped
- 5 black peppercorns
- 6 cubes chicken stock, crumbled
- 1 bay leaf
- 1/4 teaspoon celery seed
- 1 pinch dried thyme
- 1 teaspoon salt
- 125g carrots, sliced
- 125g celery, sliced
- 4 tablespoons finely chopped onion
- 1 tablespoon dried parsley
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 100g uncooked white rice

a variation of the original
- 2 tbsp Vegetable Oil
- 1 large onion Chopped
- 2 carrots finely chopped
- 2 celery sticks finely chopped
- 450g minced steak
- 1 oxo cube
- 2 tbsp porridge oats
- 150ml hot water
- 700g potato
- Butter
- Milk
- salt and pepper
Cream of tomato soup

Fry the onion in the butter for 10 mins until softened
- 1 onion, chopped
- 25g butter
- 1 clove garlic, crushed
- 1tsp paprika
- 1tbsp tomato purée
- 1kg tomatoes, chopped
- 2tsp sugar
- 1 bay leaf
- 600ml chicken or vegetable stock
- 142ml tub double cream
- Basil leaves, to serve (optional)
strawberry cake

Packed with chicken and vegetables, this thick and creamy chicken soup is a must during the winter
- 2 tablespoons butter
- 2 onions, diced
- 2 potatoes, diced
- 1 large carrot, diced
- 1 celery stick, diced
- 2 tablespoons plain flour
- 750ml chicken stock
- 150ml milk
- 175g cooked chicken
- single cream, to taste
- Salt and ground black pepper, to taste
Eve's Pudding

Preheat the oven to 180°C/fan160°C/ gas 4
- 600g cooking apples, peeled, cored and roughly chopped
- 75g light muscovado sugar
- Grated zest and juice of 1 lemon
- ¼ tsp ground cinnamon
- 100g butter
- 100g caster sugar, plus extra for dusting
- 2 large eggs
- ½ tsp vanilla extract
- 100g self-raising flour

- 2 tbsp caster sugar

Simple chicken curry

This recipe makes excellent use of a whole chicken
- 1 medium chicken, prefereably free-range, jointed into 8 pieces
- 3 tbsp curry powder, mild or hot, depending on taste
- 2–3 tbsp vegetable oil
- 2 medium onions, sliced
- 2–3 garlic cloves, finely sliced
- 2 medium waxy potatoes, chopped into 2cm/¾in cubes
- 2 red chillies, seeds removed and finely chopped
- 2 tbsp garam masala
- 600ml/20fl oz chicken stock
- 3–4 spring onions, chopped to garnish
Battenberg cake

Battenberg cake is a delicious project for an afternoon in the kitchen
- 175g very soft butter
- 175g golden caster sugar
- 140g self-raising flour
- 50g ground almonds
- ½ tsp baking powder
- 3 medium eggs
- ½ tsp vanilla extract
- ¼ tsp almond extract
- For pink sponge
- 1 x ingredients for almond sponge
- pink food colouring, we used ½ tsp Squires rose food paste
- To assemble
- 200g apricot jam
- 2 x 500g blocks white marzipan
- little icing sugar, for dusting
Spaghetti Bolognese

Spaghetti Bolognese is a classic
- olive oil
- 6 rashers higher-welfare dry-cured smoked streaky bacon, sliced 1cm thick
- 2 sprigs of fresh rosemary, leaves picked and finely chopped
- 2 cloves of garlic, peeled and finely sliced
- 1 onion, peeled and finely chopped
- 500 g quality British beef mince
- 200 ml red wine
- 1 x 280 g jar of sun-dried tomatoes
- 2 x 400 g tins of plum tomatoes
- 500 g dried spaghetti
- Parmesan cheese
