Quinoa Salad

This is a great recipe to keep in the fridge and bring for lunch a few days in a row
- - 1 cup quinoa per 2 cups chicken stock: cook 20 minutes, then cool
- - ½ yellow pepper cut into bite sized pieces
- - ½ cup tomatoes cut into bite sized pieces
- - 1 cup cucumber cut into bite sized pieces
- - 5 tbsp oil
- - 2 tbsp apple cider vinegar or balsamic
- - Lots of garlic (start with 3 cloves)
- - Black pepper
Honey Vanilla Macaroon Cheesecake

A quick, easy, low fat version of the traditional cream cheese based cheesecakes
- Macaroon Crust
- Ingredients:
- 2 Egg whites
- 1 Tbsp. Sugar
- 2 Cups Shredded Coconut
- Honey Vanilla Filling
- Ingredients:
- 2 cups Greek God’s Honey Vanilla Yogurt
- 2 Eggs
- 1.5 Tbsp. Arrowroot Powder
Pizza Dough

This is a recipe that grew from a mistake that ended up being fluffier than regular dough
- 2 Cups Water (between 110-115 degrees)
- 2 Tbsp Yeast
- 1 Tsp Honey
- 1 Tbsp Apple Cider Vinegar
- 1 Tsp Salt
- 4 Tsp Olive Oil
- 1 Tsp Garlic Powder
- 1 Tsp Dried Rosemary
- 5 Cups White Flour
