Breakfast Muffins

Makes 10 muffins
- 1 package of Pillsbury Biscuits (10 biscuits)
- 5 slices of bacon (cooked and cut into pieces)
- 4 eggs scrambled
- 5 cheese slices
- 1 egg yolk
- 1 tbsp. water
- Pepper to taste
Crescent Roll Breakfast Ring

Scramble eggs and brown sausage
- 1 (8 oz can) refrigerated crescent rolls
- 6 eggs
- 1/2 pound breakfast sausage, browned (if you aren't a sausage fan, use ham or bacon)
- 1 cup cheddar cheese
- your choice of veggies: red pepper, onion, mushrooms, green onion, etc

Stuffed Zucchini Boats

Bring a large pot of water to boil
- • 1 1/4 cups quick marinara sauce
- • 4 (31 oz total) medium zucchini
- • 1 tsp oil
- • 1/2 small onion, finely diced
- • 3 cloves garlic, crushed
- • 1/2 cup diced red bell pepper
- • 14 oz lean Italian chicken sausage, removed from casing (Al Fresco)
- • 1/2 cup part skim shredded mozzarella (Polly-O)
- • 8 tsp grated Parmesan cheese
Skinny Greek Yogurt Chicken

- 1/2 cup low-fat silken tofu or low-fat plain yogurt
- 1 tablespoon sugar or Splenda Granular (optional)
Guiltless Chicken Alfredo

Place milk, cream cheese, flour, and salt in a blender and blend until smooth
- 2 cups low-fat milk
- 1/3 cup (3 oz) low fat cream cheese
- 2-3 tablespoons flour
- 1 teaspoon salt
- 1 tablespoon butter
- 3 cloves, minced garlic
- 1 cup grated, Parmesan cheese
- 2-3 chicken breasts, cooked and sliced
Oven Baked Chicken Fajitas

Preheat the oven to 400 degrees
- 1 pound boneless, skinless chicken breasts, cut into strips
- 2 Tbsp extra virgin olive oil
- 2 tsp chili powder
- 2 tsp cumin
- ½ tsp garlic powder
- ½ tsp dried oregano
- ¼ tsp salt
- 1 (15 oz) can diced tomatoes - no salt added
- 1 small can diced green chiles
- 1 medium onion, sliced
- 1 large bell pepper, seeded and sliced (I use half a green and half a red)
Chicken Stuffed Peppers

Preheat oven to 400 degrees
- 1 lb. ground chicken
- 1 medium onion, chopped
- 1/2 c chopped mushrooms
- 1 packet Knorr vegetable soup mix
- 1/2 c. marinara sauce
- 3 egg whites
- 3/4 c. salsa
- 2 – 4 large bell peppers
Blueberry-Agave Smoothie

- 1 cup plain fat-free yogurt
- 1/3 cup fresh or frozen blueberries, thawed
- 2 teaspoons light-colored agave nectar
- 1 chilled sliced ripe banana
