Delish Stuffed shells with a Mexican twist

  • 1 lb. ground beef or turkey
  • 1/4 cup taco seasoning, 1 envelope
  • 4 oz. cream cheese, cubed
  • 12 Jumbo Pasta shells, cooked according to package instructions
  • 1 cup salsa
  • 1 cup taco sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Jack cheese

Season both sides of chicken with salt and pepper, put into crock pot

  • 3/4 pound chicken (of your choice)
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 1/8 cup chopped onion (or 1/16 cup onion flakes)
  • 1/8 cup ketchup
  • 1 Tbs. vegetable oil
  • 1 clove garlic, minced
  • 1/4 tsp. red pepper flakes

Heat a large pot over medium heat

  • 4 cups cooked pasta, penne or ziti
  • 1 cup part skim ricotta cheese
  • 2 cups marinara sauce, preferably homemade (recipe below)
  • 1 cup grated mozzarella cheese, divided
  • 1/2 cup grated parmesan cheese, divided
  • 2 tablespoons canola oil
  • 1 tablespoon olive oil
  • ½ cup finely chopped onion
  • 3 cloves garlic, minced
  • 1 28oz can crushed or ground, peeled tomatoes
  • 1 5-6 oz can tomato paste
  • 1 tablespoon dried oregano
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • 1 teaspoon pepper

Melt the butter in a large soup pot

  • 2 Tablespoons butter
  • 1/2 cup chopped onion
  • 1 cup finely chopped carrot
  • 1 celery stick, finely chopped (feel free to add more celery if you like celery; I don't, so I don't add much)
  • 1 Tablespoon minced garlic
  • 4 cups chicken broth (I usually use a mixture of low-sodium chicken broth and broth made with chicken soup base because it gives it such nice flavor)
  • 2 large baking potatoes, peeled and chopped
  • 1 Tablespoon flour
  • 1/2 cup water
  • 2/3 cup milk
  • 2 cups chopped broccoli
  • 2 heaping cups shredded cheddar cheese
