Delicious Dairy Free Hot Chocolate

Sometimes we just need a little hot cocoa to pass the long, cold days of January
- 1 cup raw cashews, soaked
- 1 large Medjool date, pitted and soaked
- 3 cups water
- 3 tablespoons pure maple syrup or agave (or to taste)
- 1/4 cup cocoa powder
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon fine grain sea salt, or to taste
- 1-ounce dark chocolate
Worlds Best Veggie Burger

With a title like this, I better be sure this burger really is the best
- 8 ounces beets, steamed or roasted and peeled*
- 1 (15 ounce) can garbanzo beans, washed and drained
- 1 (15 ounce) can black beans, washed and drained
- 1/2 cup cooked brown rice
- 1/4 cup rolled oat flour**
- 1/2 red onion, diced
- 2 garlic cloves, minced
- 1 teaspoon sumac
- 1 teaspoon dried thyme leaves
- 3/4 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- Salt
- Pepper
Virgin Pina Colada Green Smoothy

Simply delicious and one of the healthiest things you eat
- 4 cups fresh or frozen ripe sweet pineapple
- 2 cups raw coconut water
- 2 cups ice (if using fresh pineapple)
- 1 cup chopped washed dandelion greens
- ½ cup dried shredded unsweetened coconut
- ¼ cup raw cashews
- ¼ cup dried chopped pitted dates or more to taste
No Crap Hot Chocolate

Key Lime Pie Green Smoothie

Absolutely delicious smoothy that truly does taste like pie
- 2 tbsp key lime juice (about 4 limes)
- 1 tsp key lime zest (about 2 limes)
- 1 cup unsweetened non-dairy milk
- 1 ripe frozen banana
- ¼ tsp alcohol-free vanilla extract
- 2 drops liquid stevia or 1 tbsp ground xylitol or 1 pitted medjool date
- 1 tbsp sunflower butter
- 2 cups organic baby spinach
- 4 ice cubes
- Topping:
- 1 minute vanilla whipped topping (optional)
- graham cracker pieces (optional)
Vegan Taco Salad with Nuts

Delicious, healthy and as always, cruelty free
- Walnut Taco Meat: (yield: scant 1/2 cup)
- 1/2 cup walnuts, soaked for 2-8 hours
- 1 & 1/2 tsp chili powder
- 1/2 tsp cumin powder
- fine grain sea salt, to taste
- cayenne pepper, to taste (optional)
- Cashew or Macadamia cream: (yield: 1 heaping cup)
- 1 cup macadamia (or cashew) nuts, soaked in water for 2-8 hours
- 11-12 tbsp water (use as needed to achieve desired consistency)
- 2-3 tbsp fresh lemon juice, to taste
- fine grain sea salt, to taste (I used just over 1/4 tsp)
- 3-Minute Guacamole: (yield: 3/4 cup)
- 1 large ripe avocado
- 1/4 cup chopped red onion
- 1/2 small tomato, chopped
- 1/2 tsp ground cumin
- 1 tbsp + 1 tsp fresh lime juice
- scant 1/4 tsp fine grain sea salt, or to taste
- Other salad ingredients:
- greens of choice
- salsa
- green onion (optional)
- crackers
