Potato Pancakes

Mix potatoes and onion. Beat egg whites until they form soft peaks and fold into potatoe mixture
- 13/4 grated raw potatoes
- 2tb finely chopped onion
- 2 egg whites
- 1/4 c flour
- 3/4 ts baking powder
- 1/4 ts garlic powder
- 1/8 ts pepper
- 1/4 oil
Corn Muffins

Sift flour , sugar,cornmeal and powder together
- 1 c flour. 1tb sugar 3/4 yellow cornmeal 2 ts baking powder. 2 egg whites beaten. 1 c skim milk. 2 tb oil.
Banana Bread

Beat oil and 1/3 sugar together
- 1/3 c oil 2/3 c sugar 1c mashed bananas. 13/4 c flour.2ts baking powder.3 egg whites.
Apple Crisp

Arrange apples in oiled casserole
- 11/2 lbs apples sliced. 2 tb lemon juice. 1/4 ts cinnamon 2/3 c flour. 1/2 c brown sugar. 1/2 c. Oatmeal. 1/3 c margarine.
Sweet potato casserole

Cook whole sweet potatoes in boiling water 25-30 minutes until tender
- 4 sweet potatoes. 1 tb margarine 1/4 cup orange juice. 2 tb chopped walnuts. 1/4 ts nutmeg
