Western Chili

A really delicious, but really spicy
- Seasoning mix:
- 6 tablespoons Chef Paul Prudhomme's Meat Magic
- 4 tablespoons Chef Paul Prudhomme's ground dried Anaheim chile peppers
- 2 tablespoons Chef Paul Prudhomme's ground dried Guajillo chile peppers
- 1 teaspoons ground nutmeg
- 1 teaspoons Chef Paul Prudhomme's ground dried Pasilla chile peppers
- 1 teaspoons Chef Paul Prudhomme's ground dried Ancho chile peppers
- 1 teaspoons ground cinnamon
- 1 teaspoon ground coriander
- 1/2 cup yellow cornmeal
- 3 tablespoons vegetable oil
- 2 pounds beef chuck, cut into 1/2-inch cubes
- 1 1/2 cups finely diced fresh Anaheim chile peppers
- 4 cups chopped onions, in all
- 5 cups beef stock, in all
- 1 1/2 cups chopped green bell peppers
- 1 1/2 cups chopped yellow bell peppers
- 1 1/2 cups chopped red bell peppers
Basic Spaghetti Sauce

Most of this recipe is not measured out because you can't really mess up spaghetti sauce
- 1 yellow onion
- Olive oil
- Salt
- Pepper
- Cayenne
- Oregano
- Basil
- Ground beef
- 1 can of diced tomatoes
- 1 can tomato sauce
- Minced garlic
- About 1 tsp sugar
- Water or broth
Hush Puppies

Mix together the dry ingredients
- 2 cups white cornmeal
- 1 tablespoon flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 3 tablespoons finely chopped onions
- 1 cup plus 3 tablespoons milk
- 1 egg lightly beaten
- corn oil for deep frying
Soft Pretzels

Makes 16 full-sized pretzels or 32 miniature pretzels
- 2 cups warm water (100°F to 110°F)
- 1 tablespoon and 2 tablespoons sugar
- 1 packet active dry yeast
- 5 to 6 cups all-purpose flour and plus more for dusting
- 1 tablespoon salt
- 2 teaspoons canola or other neutral oil
- 1/4 cup baking soda
- 1 large egg
- Coarse or pretzel salt
- Vegetable-oil cooking spray
Cherry-Vanilla Cake

This is my favorite kind of cake
- 1/2 cup unsalted butter
- 1 1/4 cups granulated sugar
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/4 cup whole milk
- 1/2 cup maraschino cherry juice (use the juice from the bottle of cherries)
- 2 teaspoons almond extract
- 2 tablespoons flour for sprinkling over diced cherries
- 10 oz bottle maraschino cherries finely chopped
- Drop or two of red food coloring
- 4 egg whites beaten to stiff peaks
Thin Mints

Not your typical girl scout cookies, these are much better
- For the cookies:
- 8 ounces butter
- 1 cup unsweetened cocoa powder
- 1 cup powdered sugar
- 1 teaspoon vanilla
- ¾ teaspoon salt
- 1 ½ cups all purpose flour
- For the coating:
- 10 ounces semi-sweet baking chocolate
- 1 ½ teaspoon peppermint oil
