Oatmeal Chocolate Chip Cookie Truffles

Super simple, chocolate covered bite size truffles that nobody can resist
- 1 package (16 oz) Pillsbury Ready to Bake!TM refrigerated oatmeal chocolate chip cookies
- 2 cups semisweet chocolate chips
- 2 tablespoons old-fashioned oats
Chicken Yakisoba

Simple and cheap, absolutely my favorite
- ½ head green cabbage
- 1 medium yellow onion
- 2 medium carrots
- 1 small crown broccoli
- 2 inches fresh ginger
- 1 large chicken breast
- 2 Tbsp vegetable oil
- 2 (3 oz.) packages ramen noodles
- seasoning packets discarded
- 1 tsp sesame oil (optional)
- ¼ cup soy sauce
- ¼ cup worcestershire sauce
- 2 Tbsp ketchup
- 1 Tbsp sriracha hot sauce
- 1 Tbsp sugar
Classic Meatloaf

Just like mamma makes!
- 2 Tbsp unsalted butter
- 1 cup of minced onion
- 1 celery rib, minced
- 1 Tbsp minced garlic
- 1 carrot, minced
- 1/2 cup of minced green onion, including the onion greens
- 2 teaspoon salt (use 1 1/2 teaspoons if using Italian sausage)
- 1/2 teaspoon freshly ground black pepper
- 2 teaspoons Worcestershire sauce
- 2/3 cup ketchup, divided 1/3 and 1/3
- 1 1/2 pounds of ground beef (chuck)
- 3/4 pound of spicy ground pork sausage or Italian sausage (a mix of sweet and hot if you are using links)
- 1 cup fresh bread crumbs
- 2 large eggs, beaten slightly
- 1/3 cup minced fresh parsley leaves
Corned Beef and Cabbage

Preheat oven to 350°F. Drain the corned beef from the package and discard the spice packet
- Corned Beef (baked)
- 3 lbs corned beef (in package)
- 10 whole cloves
- 1/4 cup hot sweet honey mustard
- 2 Tbsp brown sugar
- Corned Beef (boiled)
- 3 lbs corned beef (in package, including spice packet)
- Cabbage (sautéed)
- Olive oil
- 1 medium yellow onion, chopped
- 1 cloves garlic, minced
- 1 large head of cabbage, sliced into 3/8-inch to 1/2-inch wide slices
- Salt
- Cabbage (boiled)
- 1 large head of cabbage, sliced into 3/8-inch to 1/2-inch wide slices
- Additional vegetables such as a couple carrots (cut to 1 inch pieces) or several new potatoes (quartered)
Beef Stroganoff

Melt 3 Tbsp of butter in a large skillet on medium heat
- 6 Tbsp butter
- 1 pound of top sirloin or tenderloin, cut thin into 1-inch wide by 2 1/2-inch long strips
- 1/3 cup chopped shallots (can substitute onions)
- 1/2 pound cremini mushrooms, sliced
- Salt to taste
- Pepper to taste
- 1/8 teaspoon nutmeg
- 1/2 teaspoon of dry tarragon or 2 teaspoons of chopped fresh tarragon
- 1 cup of sour cream at room temperature
Buttermilk Fried Chicken

Soak chicken overnight (at least 8 hours and up to two days) in buttermilk with onions, herbs, paprika, and cayenne...
- 1 (3 pound) fryer (see Wikipedia on the difference between broilers, fryers, and roasting birds), cut into pieces
- 2 cups buttermilk
- 1 large onion, sliced
- 1/4 cup chopped mixed fresh herbs (parsley, tarragon, thyme) or a teaspoon each of the dried herbs.
- 1/2 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 2 cups flour
- 1/2 teaspoon garlic salt
- 1/2 teaspoon onion salt
- 1 teaspoon cayenne pepper
- Salt and pepper
- 2 cups grapeseed oil, or other high smoke-point oil such as canola oil, or peanut oil
