Pesto Spaghetti Squash

Preheat oven to 350 degrees F
- 1 (3-pound) spaghetti squash, split in 1/2 lengthwise
- 1 recipe Roasted Garlic Pesto, recipe follows
- 1/4 cup Parmesan
- Roasted Garlic Pesto:
- 4 heads garlic
- 4 sprays olive oil cooking spray
- 2 cups fresh basil leaves
- 1 teaspoon pine nuts
Potato-Crusted Catfish with Fennel Vinaigrette and Spaghetti Squash

For the catfish: Preheat the oven to 375 degrees F
- For the Spaghetti Squash:
- 1 spaghetti squash, about 3 pounds
- 2 tablespoons olive oil
- 6 tablespoons unsalted butter
- Salt and freshly ground black pepper
- 2 to 3 tablespoons minced chives
- 3 tablespoons minced red pepper
- 1 teaspoon minced garlic
- For the Fennel Vinaigrette:
- 1/2 cup olive oil
- 1 bulb fennel, diced
- 1/2 cup diced red onion
- 1 teaspoon minced garlic
- 1/2 teaspoon fennel seed
- 1 cup peeled, seeded, and chopped plum tomatoes
- 1/4 cup white wine
- 3 tablespoons red wine vinegar
- 1 1/2 tablespoons chopped assorted soft fresh herbs, such as basil, chives, cilantro, oregano, parsley
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- For the catfish:
- 4 (5-ounce) catfish fillets
- 2 teaspoons Essence, recipe follows
- 2 tablespoons Dijon mustard
- 2 large Idaho potatoes, peeled and coarsely grated
- 1 cup vegetable oil
- Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast):
- 2 1/2 tablespoons paprika
- 2 tablespoons salt
- 2 tablespoons garlic powder
- 1 tablespoon black pepper
- 1 tablespoon onion powder
- 1 tablespoon cayenne pepper
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
Basil Chicken over Angel Hair

In a large pot of salted boiling water, cook angel hair pasta until it is al dente, about 8 to 10 minutes

- 1 (8 ounce) package angel hair pasta
- 2 teaspoons olive oil
- 1/2 cup finely chopped onion
- 1 clove garlic, chopped
- 2 1/2 cups chopped tomatoes
- 2 cups boneless chicken breast halves, cooked and cubed

Garlic Shrimp Linguine

- 1 pound uncooked linguine
- 1 tablespoon butter
- 3 tablespoons white wine
- 2 teaspoons grated Parmesan cheese
- 3 cloves garlic, minced
- 1 teaspoon chopped fresh parsley
- 1 pinch salt and pepper to taste
- 1 pound medium shrimp, peeled and deveined
Quinoa with Chickpeas and Tomatoes
