Crispy Smashed Potatoes

Preheat oven to 500 degrees
- 2 pounds small red potatoes (1 1/2 – 2 diameter)
- 6 tablespoons extra virgin olive oil (more if needed)
- 1 teaspoon thyme leaves
- fresh ground salt and pepper to taste
Pineapple Cake

1. Preheat oven to 350 degrees
- 1-1/2 cups flour
- 3/4 cup sugar
- 3/4 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 9 tbsp (1 stick + 1 tbsp) unsalted butter, softened
- 3 egg yolks
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 1 cup mashed bananas (about two large bananas)
- 1/2 cup walnuts, chopped
- 20 oz pineapple chunks, well drained
- 1/3 cup light brown sugar, packed
- powdered sugar, for dusting

- 2-3 Cups Raw Chicken, cut into 1-inch pieces
- 1 10oz Can Diced tomatoes with Green Chiles
- 1 8oz Can Tomato Sauce
- 2 14.75oz Cans Chicken Broth
- 1 10.75oz Can Cheddar Cheese Soup
- 2 Cups Carrots
- 1/2 Package Frozen Corn (approx. 1-2 cups)
- 1 Large Onion, chopped
- 2 Cloves Garlic, minced
- 1/2 Teaspoon Ground Cumin
- 1/2 Tablespoon Chili Powder
Hot Spinach Salsa Queso Dip

1) Cut the Velveeta and cream cheese into cubes and place all ingredients in a microwaveable-safe dish
- 10 ounces frozen chopped spinach, thawed and drained
- 1 lb Velveeta cheese (2% fat--this is the reduced fat version)
- 8 ounces cream cheese (light)
- 1 jar salsa (I used 3/4 full jar of a 16 ounce jar)
- A handful of chopped cilantro (optional-but good)
Banana Pudding Poke Cake

Prepare cake mix according to package directions for a 9x13 cake
- 1 box yellow cake mix
- ingredients needed to make cake (eggs, oil & water)
- 2 (3.4 oz.) packages instant banana pudding
- 4 cups milk
- 1 (8 oz.) tub frozen whipped topping, thawed
- 20 vanilla wafers, crushed
Apple Pie Dip and Cinnamon Tortilla Chips

You can either cook this on the stove-top or the microwave
- 2 cups peeled, cored, and diced apple
- 2 tbsp fresh lemon/calamansi juice
- 3 tbsp brown sugar
- ¼ tsp cinnamon
- 1 tsp cornstarch dissolved in 1 tsp water
- for the chips
- 5 (6-inch) wheat tortillas
- 2 tablespoons butter, melted
- ½ teaspoon cinnamon
- 1½ tablespoons sugar
Southwestern Eggrolls

Preheat oven to 425F. Line 2 baking sheets with aluminum foil and spray lightly with cooking spray
- 2 cups frozen corn, thawed
- 1-15 oz can black beans, rinsed and drained
- 1-9 oz package frozen chopped spinach, thawed and squeezed dry with paper towel
- 2 cups shredded Mexican cheese
- 1-7oz can diced green chiles, drained
- 4 green onions, finely chopped
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1 tsp salt
- 1/2 tsp cayenne pepper
- 1 package of egg roll or wonton wrappers

- 1 green apple
- 1 Tbsp brown sugar, divided
- 1 Tbsp butter, divided
- 1/4 tsp cinnamon, divided
- 1 medium wedge of brie

Orange Push-Up Smoothie

Combine all ingredients, except ice and optional alcohol, in a large blender or Vita-Mix and blend until smooth and...
- 1 can orange juice concentrate, slightly thawed
- 1 cup milk (half and half, cream, nut milk, soy milk, vegan milk, etc.)
- 1/2 cup granulated sugar, or to taste (you can reduce the sugar or use an alternate sugar substitute such as stevia but it won't taste as close to classic Orange Push-Ups. Many people use much more than 1/2 cup, myself included. I used about 1 cup in my version)
- 1/2 teaspoon vanilla extract
- 2 cups ice, or to taste
- 1 to 2 ounces of Rum, Malibu, Vodka, Citron, Marshmallow Vodka, Gran Marnier or similar, per smoothie portion, or to taste, optional
Crock Pot BBQ Chicken

Mix BBQ sauce with all ingredients listed under it
- 4-6 pieces boneless skinless chicken breasts (i threw them in frozen... even easier!)
- 1 bottle BBQ sauce (sweet baby ray's all the way!)
- 1/4 c vinegar
- 1 tsp. red pepper flakes
- 1/4 c brown sugar
- 1/2 - 1 tsp. garlic powder
