Baked Parmesan Tomatoes

Preheat oven to 450° F. Place tomatoes cut-side up on a baking sheet
- 4 tomatoes, halved horizontally
- 1/4 cup freshly grated Parmesan cheese
- 1 teaspoon chopped fresh oregano
- 1/4 teaspoon salt
- Freshly ground pepper, to taste
- 4 teaspoons extra-virgin olive oil
Skinny Baked Mozzarella Sticks

Cut cheese in half to give you 24 pieces
- 12 sticks part-skim, reduced sodium mozzarella string cheese (Sargento)
- 1 large egg, beaten
- 2 tbsp flour
- 5 tbsp Italian seasoned breadcrumbs
- 5 tbsp panko crumbs
- 2 tsp parmesan cheese
- 1 tbsp dried parsley
- olive oil cooking spray (I used my misto)
Pizza Pasta Casserole

Step One After browning meat and cooking noodles, layer in slow cooker
- 1 Pound Hamburger meat, browned
- 1 Package Noodles of your choice, boiled (we use hairbow or elbow)
- 1 Jar Pizza sauce
- 1 Package Pepperoni
- 1 Package Cheese
Creamy Chicken and Potatoes

Step One Sprinkle chicken with poultry seasoning and place in sprayed slow cooker
- 4 Boneless, skinless chicken breast halves
- 2 Teaspoons Poultry seasoning
- 8 - 10 Small new (red) potatoes w/ peels
- 1 Can Cream of chicken soup
- 8 Ounces Sour cream
Pepper Jack Cheese Soup

Step One Add all ingredients into slow cooker and set on low
- 2 Cans Diced Potatoes
- 2 Cans Chopped Green Chilis
- 2 Cans Cream of Potato Soup
- 2 Cans Cream of Celery Soup
- 2 Cans Evaporated Milk
- 1 Package Diced Ham
- 2 Blocks of Pepper Jack Cheese
- 2 Cups Water
Rachel's Lasagna

Boil the noodles until al dente
- 1 box of uncooked lasagna noodles
- 1 lb lean hamburger
- 1 26 oz jar spaghetti sauce
- 1 tbsp minced garlic
- 1 tsp Italian Seasoning
- 1 16oz tub of fat free cottage cheese
- 1/2 cup Parmesan cheese
- 2 large eggs
- 1/2 tsp garlic salt
- 2 6 oz bags of shredded white cheese in any flavor/variety you prefer
- parsley for garnish
Grandma Grandma's Banana Nut Bread

Cream oil, sugar, eggs, and vanilla
- 2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/3 cup oil
- 1 1/2 cups mashed bananas (or 3 bananas)
- 1/2 tsp vanilla
- 3 eggs
- 1 cup sugar
- 3/4 cups walnuts
The Best Chicken and Dumpling Soup

Also works really well with turkey, like leftover from Thanksgiving
- 1-2 lbs of chicken (whatever you have on hand is fine)
- Salt and Pepper to taste
- 4 large carrots
- 3 stalks celery
- 1-2 tbsp onion powder, to taste
- 4 cups chicken broth (you can add more if you like your soup less thick)
- 1 tsp rosemary
- 1/2 cup flour
- 1/2 tsp baking soda
- 1/4 cup skim milk
- 2 tsp shortening
- 1 cup frozen peas, or mixed frozen veggies
- 2 tbsp parsley
Grandma Marie's Baked Chicken in Rice

Brown rice and onion in butter
- 6-8 boneless chicken breasts or a family pack of drumsticks
- 1 tsp salt
- 1 tsp paprika
- 1/4 tsp pepper
- 2 cups uncooked rice
- 1/2 cup chopped onion or 1-2 tbsp onion powder
- 2 tbsp butter
- 3 cups chicken broth
- 1 tsp celery salt (celery seed will work in a pinch too)
Garlic Shrimp Pasta

Cook pasta as directed, Drain, return to pot, stir in spinach, tomatoes, and 2 tsp olive oil
- 8 oz uncooked angel hair pasta
- 4 cups fresh baby spinach leaves
- 1 1/2 cups halved cherry tomatoes
- 3 tsp olive oil
- 1/2 cup onion, finely chopped
- 1 1/2 lb medium shrimp, no tail
- 3 cloves garlic, finely chopped
- 1/4 tsp crushed red pepper flakes
- 1/2 cup chicken broth
- 1/4 tsp salt
- 1/8 tsp pepper
- 3 tbsp parsley
