Step 1

Heat your oven to 400 degrees and place parchment over two cookie sheets. Slice the eggplant into 1/4 inch thick slices. Brush both sides of each slice with olive oil and sprinkle with Bourbon Smoked Salt and Pepper. Bake for 10-12 minutes. Flip the slices over. Bake for another 10-12 minutes.
