Step 1
Mix the dry ingredients together in a big bowl.
Add 1 1/2 cups of warm water, then mix until you have dough. Add more water if you have to in order to make a dough that is soft and easy to knead, but not sticky. If the dough is too sticky, add some flour 1 tablespoon at a time.
Transfer the dough to a lightly floured work surface and knead by hand for 10 min, (or knead the dough in a standing mixer with a dough hook for 5 mins), until smooth & elastic.
Step 2
Flatten and fold the dough like an envelope, then cook.
