Chocolate cake with healthy twists

Ingredients

  • For cake
  • 1/2 cup Whole Wheat Flour/Atta
  • 1/4 cup Sugar
  • 2 large eggs
  • A pinch of salt
  • 1 tablespoon Cocoa Powder
  • 1/4 teaspoon Instant Coffee
  • 1/4 teaspoon Vanilla Essence
  • 1/4 teaspoon Bicarbonate of Soda
  • 2-3 teaspoon hot water
  • 1/4 cup butter
  • 100 grams
  • For Chocolate Ganache:
  • 100 grams 80-90% chocolate
  • ½ cup milk
  • 2 tablespoons cocoa powder

Preparation

Step 1

For cake:
Start with the oven. Pre heat to 180C/350F.
Greece the cake pan and keep it ready

Step 2

Mix the cocoa powder with the coffee with the hot water
Next mix sugar, butter and eggs till sugar dissolves. Then add vanilla essence to it.

Step 3

Sift the bicarbonate soda and salt with the flour twice.
Now fold the sifted dry ingredients into the wet (eggs and cocoa powder mixture). Do not over mix.

Step 4

Put the batter in the loaf tin and bake at 180C till 15-20 minutes or till when knife inserted it comes out clean.

Step 5

For Chocolate Ganache:
Chop the chocolate bars into very small pieces. (This will help it to melt fast)
On a low heat, boil the milk and mix cocoa powder in it.
When milk comes to boil, add in the chopped chocolate and mix. Mix till it becomes smooth and no lumps are remains.

Make sure that all the ingredients are at room temperature.
For eggless version, omit eggs and use ¼ cup of yogurt/curd.
I used whole wheat flour; same recipe can be followed with all purpose flour as well.
Double the recipe if you want to make larger cake.
Mixture or only milk, white or dark chocolate can be use to make the sauce. Even chocolate chips can be used.

INGREDIENTS

For the batter:

  • 3 eggs
  • 3/4 cup sugar
  • 1/3 cup of cocoa powder
  • 1 cup flour
  • 2 tablespoons neutral oil
  • 1 cup of of natural yogurt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

For the frosting:

  • 2 cups chocolate chunks
  • 3 cans of condensed milk
  • 2 and 1/2 cups thickened cream
  • 1 tablespoon unsalted butter

METHOD

  1. In a pan, melt together the condensed milk, the chocolates in pieces and the butter.  Slowly fold in the thickened cream. Mix, without stopping, until it is smooth and thick.
  2. Transfer to the refrigerator and allow to cool for 1 hour.
  3. In a bowl, mix together the eggs and sugar. Add the oil and mix again.
  4. In another bowl mix together the flour, cocoa powder, baking powder and the bicarbonate soda. Pour in the egg mixture, mix together, then add the yogurt.
  5. Grease and sprinkle cocoa powder inside two springform pans. Divide the batter mixture between them, then bake at 360°F for approximately 20 minutes.

  6. Remove the cakes from the oven, and allow to cool. 
  7. Spread some of the frosting between the layers of the cake, and generously spread around the outside.
  8. Decorate the cake with Kit Kats, extra frosting and Fererro Rochers, in your style! 
  9. Enjoy!
