- 1 onion, diced 1 packet taco seasoning mix 1 16 oz bag frozen corn 1 bell pepper (red, yellow or green), diced 1 12 oz can black beans, drained and rinsed (optional) 3 cups shredded cheddar cheese, divided 1 160z bag of frozen tater tots 1 1/2 cup of salsa 3 tablespoons sliced black olives (optional) Optional toppings Diced tomatoes Shredded lettuce Sour Cream Avocado Slices and ground beef

Preheat oven to 400 degrees
Cook ground beef & onion medium-high heat until no pink remains
Add taco seasoning mix, 1/4 cup water, frozen corn, bell pepper and rinsed black beans. Cook an additional 5 minutes or until liquid has evaporated. Stir in 1/2 of the cheese.
Pour beef mixture into a greased 9x13 pan. Arrange tater tots on top. Bake for 30 minutes.
While this mixture is baking, blend salsa until smooth.
After 30 minutes, remove from the oven, top with salsa, cheese and olives if using
Bake until cheese is melted and bubbly. Serve with desired toppings
