Ingredients
- 2 cups special K, crushed
- 2 tbsp. butter, melted
- 1 can diced tomatoes with juice
- 1 cup elbow macaroni, cooked and drained
- ¼ c. chopped onion
- ¼ c. chopped celery
- ¼ c. chopped carrot
- 1 pkg. frozen spinach (10oz)(thawed & drained)
- 2 ½ c. shredded cheddar cheese
- pinch pepper, oregano leaves & garlic power
- 1 tbsp. veg. oil

Preparation
Step 1
Combine crushed cereal with butter. Set aside for topping.
Step 2
In a large fry pan, cook onion, celery and carrot in oil until tender. Stir in pepper, oregano, garlic powder and tomatoes.
Step 3
Bring to a boil and simmer uncovered for about 20 minutes.
Step 4
Stir in macaroni, spinach and cheese. Pour into a 2L casserole. Sprinkle with cereal topping.
Step 5
Bake 350 for about 25 minutes, until lightly browned.
