Vegetable Cheese Casserole

Ingredients

  • 2 cups special K, crushed
  • 2 tbsp. butter, melted
  • 1 can diced tomatoes with juice
  • 1 cup elbow macaroni, cooked and drained
  • ¼ c. chopped onion
  • ¼ c. chopped celery
  • ¼ c. chopped carrot
  • 1 pkg. frozen spinach (10oz)(thawed & drained)
  • 2 ½ c. shredded cheddar cheese
  • pinch pepper, oregano leaves & garlic power
  • 1 tbsp. veg. oil

Preparation

Step 1

Combine crushed cereal with butter. Set aside for topping.

Step 2

In a large fry pan, cook onion, celery and carrot in oil until tender. Stir in pepper, oregano, garlic powder and tomatoes.

Step 3

Bring to a boil and simmer uncovered for about 20 minutes.

Step 4

Stir in macaroni, spinach and cheese. Pour into a 2L casserole. Sprinkle with cereal topping.

Step 5

Bake 350 for about 25 minutes, until lightly browned.
