You might be familiar with the classic cabbage-based Korean kimchi, but what about this refreshing cucumber version? It's especially popular during the spring and summer seasons. This version stuffs whole cucumbers with the kimchi for the ultimate tasty side dish.

Ingredients for 6 servings

Prep time: 25 min.

Marinating time: 20 min.

  • 6 small cucumbers
  • 1 onion
  • 2 garlic cloves
  • 1-inch fresh ginger
  • 6 scallions
  • 1 carrot
  • 1 tsp crushed red pepper flakes
  • 2 tbsp sesame seeds
  • 1 tbsp fish sauce
  • 1 tbsp sugar
  • 1/4 cup water
  • 2 tbsp salt
  • 1 tsp ginger
