Beetroot Risotto

Beets are long-lasting when packaged and are also very healthy. You can also use pickled beets as an alternative to create this unique dish. 


Ingredients (serve 4):

  • 2 small packaged beetroot bulbs
  • 1 small onion
  • 2 cloves of garlic
  • 1 large cup of risotto rice (about 1 cup or 7 ounces)
  • 2/3 cup of white wine
  • 3 cups of vegetable broth
  • 2/3 cup freshly grated Pecorino
  • 1 tbsp olive oil
  • Salt & pepper to taste

Instructions: 

  1. Finely grate the beetroot bulbs and peel and finely chop the onion and garlic.
  2. Heat the olive oil in a pot. First, sauté the onions until translucent and then add the garlic. Now add the grated beetroot to the pot and let it sauté briefly.
  3. Add the rice to the pot and cook while stirring constantly until it becomes translucent.
  4. Deglaze with the white wine and let it simmer while stirring over medium heat. Now add 1-2 ladles of vegetable broth. Keep stirring diligently. As soon as the liquid has evaporated, keep adding vegetable broth until the rice is cooked. Don't forget to keep stirring.
