Ingredients (for 4 servings):
2 tbsp olive oil
1 onion, finely chopped
3 garlic cloves, minced
1 can (28 oz) crushed tomatoes
1/2 cup red wine
1 tsp dried oregano
1/2 tsp dried basil
1/4 tsp red pepper flakes (optional)
Salt and pepper, to taste
Fresh parsley or basil, for garnish
Cooked pasta of choice, for serving
Instructions:
Heat olive oil in a large skillet over medium heat. Add onion and cook for 5–6 min. until softened.
Stir in garlic and cook for 1 min. until fragrant.
Pour in the red wine, scraping the bottom of the pan, and let simmer for 2–3 min. to reduce slightly.
Add crushed tomatoes, oregano, basil, red pepper flakes (if using), salt, and pepper. Stir well.
Reduce heat to low and let simmer uncovered for 20 min., stirring occasionally.
Toss with cooked pasta and garnish with fresh herbs before serving.
