This Falafel Trio and Beetroot Hummus Plate is the Answer to Your Summer Snack Cravings

Falafels are a deeply satisfying vegetarian snack made from ground chickpeas and plenty of delicious spices. Here's our easy-to-follow recipe for a trio of falafels served with a vibrant, flavorful beetroot hummus.

INGREDIENTS (SERVES 4)

falafels:

  • 1 lb dried chickpeas
  • 1 small onion
  • 2 garlic cloves (or more if you like)
  • 1 bunch parsley
  • 2 tsp ground coriander
  • 2 tsp ground caraway seeds
  • 1/4 tsp cayenne pepper
  • 2 tsp salt
  • 1/2 cup zaa'tar seasoning
  • 3/4 cup swiss cheese
  • 1/3 cup black sesame seeds

Beetroot Hummus:

  • 1 15-oz can of chickpeas
  • 1 cooked beet
  • 2 tbsp tahini
  • Juice of 1 lemon
  • 2 grated garlic cloves
  • 2 pinches of cumin
  • Dash of olive oil

Three Cheese Baguette

You'll drool over this 3 cheese, bacon-wrapped baguette.

 

INGREDIENTS

  • Blue cheese
  • Cheddar cheese
  • Mozarella
  • 1 baguette
  • Sun-dried tomatoes
  • Bacon

METHOD

  1. Cut your cheeses into thin slices
  2. Slice baguette down the middle (like a sandwich)
  3. Layer cheddar, blue, and mozarella cheese inside the bread
  4. Top with sun-dried tomatoes
  5. Close baguette and wrap with bacon strips
  6. Put in oven and bake for 20 minutes at 350 degrees
  7. Slice and serve!
