Your New Favorite Healthy Snack: Sweet Potato Toasts (3 Ways)

For the base:

  • 2 sweet potatoes
  • Olive oil
  • Fine sea salt
  • Freshly cracked black pepper

For the goat cheese, zucchini radish toast:

  • 1/2 cup goat cheese
  • 1 zucchini
  • 6 radishes
  • 6 sprigs of chives

For the tomato-avocado toast:

  • 1 avocado
  • 8 cherry tomatoes
  • 1 large handful of mixed salad greens
  • 1 small piece of feta
  • 2-6 stalks of cilantro

For the sweet blueberry toast:

  • 1 plain yogurt
  • 1  1/3 cup blueberries
  • 1 handful of pistachios

Did you know you can toast sweet potato slices... and it's absolutely delicious!


  1. Slice an avocado in half.
  2. In a bowl, combine avocado with half an onion (diced) and coriander. 
  3. Add the juice from half a lemon and some salt, and mix.
  4. Cut a sweet potato into 1/2 inch slices.
  5. Place in a toaster, making sure to toast both sides. 
  6. Spread the avocado mix onto the toast. Enjoy!
