Savory Leek and Mortadella Quiche

Ingredients

  • 1 sheet of puff pastry
  • 5 leeks
  • 3.5 oz. of Italian mortadella with pistachios (or any thinly sliced deli meat)
  • 4 tbsp sour cream
  • 1 egg
  • 1/2 cup shredded gruyère cheese (or swiss, cheddar, etc.)
  • 1 1/2 tbsp butter
  • 2 tbsp olive oil
  • Fine sea salt and freshly cracked black pepper
