Easy Cauliflower Shrimp Fried Rice

Wash the cauliflower, then cut it in half from top to bottom. 

Manual method:  Finely grate the cauliflower halves (floret-parts only), using the largest holes on a box grater. Reserve the cauliflower stems for another use.

Food processor method: If you have a food processor, chop the cauliflower halves into florets, and reserve the stems for another use. Working in batches, pulse the cauliflower florets in your food processor until they have a rice-like consistency and shape.

Set the rice cauliflower aside in a bowl.
