Prepare the sushi rice

Rinse the rice 3 times under cold water and cook it in your rice cooker with 1 1/4 times its volume in water. If you don't have a rice cooker, put the rice in a saucepan with 1 1/4 times its volume in water and bring to a boil. Turn the heat down and simmer until the water is completely absorbed. During this time, simmer the rice vinegar and sugar together, in order to dissolve the sugar.

Pour the cooked rice into a bowl, wait 5 minutes, then add the sweet vinegar little by little and stir. Let cool.
