Ingredients (for 6 muffins):

  • 1 cup warm milk
  • 2 tbsp honey
  • 2 tsp active dry yeast
  • 4 cups all-purpose flour
  • 1 tsp salt
  • 1/4 cup cornmeal (for dusting)

Instructions:

  1. In a large mixing bowl, combine the warm milk and honey. Sprinkle the yeast over the top and let it sit for about 5 min. until it becomes frothy.
  2. Add the flour and salt to the yeast mixture. Stir until a sticky dough forms. Cover the bowl with plastic wrap and let it rise at room temperature for 12 hours or overnight.
  3. Preheat a griddle or skillet over medium-low heat. Sprinkle a clean surface with cornmeal. Turn the dough out onto the surface and pat it into a 1/2-inch thick rectangle. Use a round cutter to cut out 6 muffins. Dust both sides with cornmeal and let them rest for 10 min.
  4. Place the muffins on the griddle and cook for about 5-7 min. on each side, until golden brown and cooked through. Adjust the heat as necessary to avoid burning.
  5. Allow the muffins to cool slightly before splitting them open with a fork. Toast and enjoy with butter, jam, or any of your favorite toppings!
