Pumpkin grilled cheese is a delightful twist on the classic sandwich, featuring creamy pumpkin purée and a hint of nutmeg paired with your favorite cheese, all grilled to perfection. This comforting meal is perfect for chilly days and pairs wonderfully with seasonal soup for a hearty lunch or dinner.
Ingredients (for 2 servings):
4 slices of bread (your choice)
½ cup pumpkin purée
½ tsp ground nutmeg
4 slices of cheese (cheddar, mozzarella, or your preference)
1 tbsp butter (for grilling)
Instructions:
In a small bowl, mix the pumpkin purée and nutmeg until well combined.
Spread the pumpkin mixture evenly over 2 slices of bread. Top each with 2 slices of cheese, then place the remaining bread slices on top to form sandwiches.
Heat a skillet over medium heat and melt the butter. Once melted, place the sandwiches in the skillet.
Grill for about 3-4 min. on each side, or until the bread is golden brown and the cheese is melted.
Remove from the skillet, slice, and serve warm with your favorite seasonal soup.
