Roasted Brussels Sprouts

Roasted Brussels sprouts are a simple yet irresistible side dish that turns humble sprouts into crispy, golden bites of flavor. Roasted to perfection, their nutty caramelized edges pair beautifully with a sprinkle of freshly grated Parmesan. This dish comes together effortlessly, making it ideal for both weeknight dinners and festive gatherings. Whether served as a side or a snack, they’re proof that simple ingredients can create something truly extraordinary!

Ingredients (for 4 servings):

  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • ½ cup freshly grated Parmesan cheese
  • Lemon wedges (optional, for serving)

Instructions:

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large mixing bowl, toss the halved Brussels sprouts with olive oil, minced garlic, salt, and pepper until evenly coated.
  3. Spread the Brussels sprouts cut-side down on the prepared baking sheet in a single layer. Roast for 18–20 min, or until the edges are golden and crispy, and the sprouts are tender when pierced with a fork.
  4. Remove the baking sheet from the oven and sprinkle the sprouts with Parmesan cheese. Return to the oven for an additional 2–3 min, or until the cheese melts and forms a lightly golden crust.
  5. Transfer the Brussels sprouts to a serving dish and add a squeeze of lemon juice, if desired, for a bright finish. Serve immediately.
