Ingredients (serve 4):
1.75 lb white asparagus
2 tbsp vinegar
2 cups water
2 tbsp lemon juice
1/3 lb deli ham
2 tbsp margarine
3 tbsp flour
1 cup milk
1 cup vegetable broth
Salt, pepper, and nutmeg for seasoning
Instructions:
Wash and brush the asparagus. Peel and place them in a bowl with water and vinegar.
Bring water with salt and lemon juice to a boil. Cook asparagus in it for 30 minutes. Remove and drain. Reserve 1 cup of the cooking broth.
For the sauce, cut the deli ham into thin strips. Heat the margarine in a pot, add the flour all at once and sweat it while stirring for 2 minutes. Pour in the milk, vegetable broth, and reserved broth, and cook the sauce, stirring, for 5 minutes.
Season the sauce with salt, pepper, and nutmeg. Heat the asparagus in the sauce for 3 minutes and serve with the ham.
