White Asparagus with Cream Sauce and Cooked Ham

Ingredients (serve 4):

  • 1.75 lb white asparagus
  • 2 tbsp vinegar
  • 2 cups water
  • 2 tbsp lemon juice
  • 1/3 lb deli ham
  • 2 tbsp margarine
  • 3 tbsp flour
  • 1 cup milk
  • 1 cup vegetable broth
  • Salt, pepper, and nutmeg for seasoning

Instructions:

  1. Wash and brush the asparagus. Peel and place them in a bowl with water and vinegar.
  2. Bring water with salt and lemon juice to a boil. Cook asparagus in it for 30 minutes. Remove and drain. Reserve 1 cup of the cooking broth.
  3. For the sauce, cut the deli ham into thin strips. Heat the margarine in a pot, add the flour all at once and sweat it while stirring for 2 minutes. Pour in the milk, vegetable broth, and reserved broth, and cook the sauce, stirring, for 5 minutes.
  4. Season the sauce with salt, pepper, and nutmeg. Heat the asparagus in the sauce for 3 minutes and serve with the ham.
