One-Pot Pasta
One-pot pasta is energy saving because the sauce is cooked together with the pasta, so no need to turn on two burners.
Ingredients (serves 4):
- 1 lb tagliatelle
- 1 onion
- 2 garlic cloves
- 1 can diced tomatoes (about 14.5 oz)
- 2 tbsp oregano
- 4 cups vegetable broth
- 3 1/3 cups water
- 2 tbsp olive oil
- Salt and pepper to taste
- Optional: basil
Instructions:
- Add the tagliatelle to a large pot.
- Peel and chop the onion and garlic. Add them to the pot along with the diced tomatoes (fresh tomatoes work too!) and oregano.
- Add the vegetable broth.
- Add the olive oil. Cook according to the pasta package instructions or until all of the liquid has evaporated.
- Season with salt and pepper, mix well, and serve with freshly grated Parmesan and optional basil leaves.
