One-Pot Pasta

One-pot pasta is energy saving because the sauce is cooked together with the pasta, so no need to turn on two burners.


Ingredients (serves 4):

  • 1 lb tagliatelle
  • 1 onion
  • 2 garlic cloves
  • 1 can diced tomatoes (about 14.5 oz)
  • 2 tbsp oregano
  • 4 cups vegetable broth
  • 3 1/3 cups water
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Optional: basil

Instructions:

  1. Add the tagliatelle to a large pot.
  2. Peel and chop the onion and garlic. Add them to the pot along with the diced tomatoes (fresh tomatoes work too!) and oregano.
  3. Add the vegetable broth.
  4. Add the olive oil. Cook according to the pasta package instructions or until all of the liquid has evaporated.
  5. Season with salt and pepper, mix well, and serve with freshly grated Parmesan and optional basil leaves.
