Sweet Croissant Casserole

Turn ordinary croissants into a dreamy, custardy casserole with fresh berries and a hint of vanilla. This make-ahead breakfast bake is perfect for easing into daylight savings time, offering a sweet and satisfying start to your day. Plus, it’s a fantastic way to repurpose leftover croissants into something special! Try making this the night before and toss it in just before you need it!

Ingredients (for 6-8 servings):

  • 6 croissants, sliced into 1-inch pieces
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 4 large eggs
  • 1 ½ c milk
  • ½ cup heavy cream
  • ? cup granulated sugar
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • Powdered sugar, for dusting (optional)

Instructions:

  1. Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. Arrange croissant pieces and berries in the baking dish.
  3. In a bowl, whisk together eggs, milk, cream, sugar, vanilla, and cinnamon until well combined.
  4. Pour the egg mixture evenly over the croissants, pressing down gently to soak.
  5. Let sit for 10-15 min., allowing the croissants to absorb the custard.
  6. Bake for 30-35 min., until golden and set. Let cool slightly, then dust with powdered sugar if desired.
