Hashbrown Breakfast Bake

This cheesy, golden-baked casserole layers crispy hash browns, savory sausage, sweet corn, and fluffy eggs for a hearty, make-ahead breakfast. Perfect for feeding a crowd with minimal effort! Crispy on the edges, cheesy in the middle, and loaded with bold, savory flavors—this effortless breakfast bake is the ultimate brunch staple.

Ingredients (for 6-8 servings):

  • 1 lb breakfast sausage, crumbled and cooked
  • 3 cups frozen shredded hash browns, thawed
  • 1 cup canned corn, drained
  • 6 large eggs
  • 1 cup milk
  • 1 ½ cups shredded cheddar cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper, to taste

Instructions:

  1. Grease a 9x13-inch or 10" round casserole dish. 
  2. Spread the hash browns evenly in the dish, then layer with cooked sausage and corn.
  3. In a bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and pepper. Pour over the casserole.
  4. Refrigerate until ready to bake. 
  5. Preheat oven to 375°F and sprinkle cheese on top and bake for 35-40 min. until golden and set.
  6. Let cool slightly before slicing and serving.
