Ingredients (for 4-6 servings):
For the Salad:
1 cup cooked quinoa, cooled
1 cup strawberries, hulled and sliced
1 peach, sliced
1 cup white grapes, halved
1 plum, sliced
2 tbsp fresh mint, chopped
For the Dressing:
2 tbsp honey
Juice and zest of 1 lime
Instructions:
In a large bowl, combine the cooled quinoa, strawberries, peach slices, grapes, and plums.
In a small bowl, whisk together honey, lime juice, and lime zest.
Drizzle the dressing over the fruit and toss gently to coat.
Sprinkle with fresh mint and let chill in the fridge for at least 30 min. (or overnight) to enhance the flavors.
