Ingredients (for 2-3 servings):
¼ cup chia seeds
1 cup almond milk (or milk of choice)
1 tbsp maple syrup or honey
½ tsp vanilla extract
½ cup mixed fresh berries (strawberries, blueberries, raspberries)
Optional toppings: shredded coconut, nuts, or granola
Instructions:
In a bowl or jar, whisk together chia seeds, almond milk, maple syrup, and vanilla extract. Let sit for 5 min., then stir again to prevent clumping.
Cover and refrigerate overnight (or at least 4 hours) until thickened.
Before serving, stir the pudding and divide into bowls or jars.
