Florida: Key Lime Pie

Sunny Florida is practically synonymous with Key lime pie, a tangy, creamy dessert that originated in the Florida Keys. This iconic pie features a smooth pale-yellow custard made from sweetened condensed milk, egg yolks, and the juice of tiny Key limes, all poured into a crumbly graham cracker crust. Topped with clouds of whipped cream, a slice of Key lime pie delivers the perfect balance of sweet and tart. The true origin of the recipe is debated – several Florida families and restaurants have laid claim to it – but it’s agreed that by the early 20th century it was a local favorite in Key West. Interestingly, Key limes themselves were largely wiped out in Florida by hurricanes and disease, and most Key limes are now imported. Still, Floridians proudly serve this pie as a refreshing treat, and it’s the official state pie of Florida.
