New Jersey: Taylor Ham Sandwich

Few foods inspire as much state pride (and friendly debate) in New Jersey as the Taylor ham or pork roll breakfast sandwich. This Jersey staple features a special kind of salty, bologna-like pork sausage that’s unique to the region, fried up and served on a chewy Kaiser roll with a fried egg and American cheese, plus often a dash of ketchup or hot sauce. The key ingredient – known as Taylor ham in North Jersey and pork roll in South Jersey – was invented in New Jersey in the 19th century and has been a breakfast favorite for over a century. It comes pre-cooked in a round loaf; cooks typically cut four little slits around the edges (to prevent curling), then grill the slices. The great name debate (Taylor ham vs. pork roll) is a lighthearted rivalry between different parts of the state, but whichever name you use, everyone agrees it’s delicious.
