Classic Greek Salad

This traditional Greek salad is an easy, healthy way to combine several anti-inflammatory foods in one refreshing dish. Tomatoes and red onion bring antioxidants like quercetin and lycopene, while creamy feta adds a dose of calcium and protein. A drizzle of extra virgin olive oil not only boosts flavor but also helps your body absorb those valuable lycopene compounds—amplifying the health benefits.


Ingredients (serves 4):

  • 1 large cucumber
  • 4 large tomatoes
  • 1 small red onion
  • Juice of 1 lemon
  • 5 oz (140 g) feta cheese
  • 2 handfuls Kalamata olives
  • Salt and freshly ground black pepper, to taste
  • Extra virgin olive oil, to taste

Instructions:

  1. Wash all the vegetables thoroughly. Slice the red onion thinly, and cut the cucumber and tomatoes into bite-sized chunks.
  2. Place the chopped vegetables in a large salad bowl. Drizzle with lemon juice, season with salt and pepper, and toss gently.
  3. Add the Kalamata olives, then crumble the feta cheese over the top.
  4. Finish with a generous drizzle of extra virgin olive oil. Serve and enjoy immediately!
