Ingredients (serves 4):
1 large cucumber
4 large tomatoes
1 small red onion
Juice of 1 lemon
5 oz (140 g) feta cheese
2 handfuls Kalamata olives
Salt and freshly ground black pepper, to taste
Extra virgin olive oil, to taste
Instructions:
Wash all the vegetables thoroughly. Slice the red onion thinly, and cut the cucumber and tomatoes into bite-sized chunks.
Place the chopped vegetables in a large salad bowl. Drizzle with lemon juice, season with salt and pepper, and toss gently.
Add the Kalamata olives, then crumble the feta cheese over the top.
Finish with a generous drizzle of extra virgin olive oil. Serve and enjoy immediately!
