Ingredients (serves 6):
6 smoked pork chops
2 tbsp butter
Salt and pepper, to taste
For the pineapple sauce:
2 garlic cloves
1/2 onion, finely chopped
1 can pineapple chunks in syrup (about 20 oz)
1/2 cup chicken broth
1 tsp vinegar (white or apple cider)
Fresh parsley, for garnish
Instructions:
Start by making the sauce. In a blender, combine half the can of pineapple chunks with some syrup, chicken broth, vinegar, and a bit of parsley. Blend until smooth and well combined.
Finely chop the garlic and onion. Sauté in a pan with a little oil over medium heat until golden brown.
Add the pineapple sauce to the pan and bring to a simmer. Season with salt, pepper, and paprika if you want a spicy kick.
Meanwhile, heat a skillet or grill and melt the butter. Cook the pork chops one by one, browning on both sides. Season to taste and keep warm near the heat source.
