French Plum Clafoutis (Prune Pudding)

Fresh plums or dried prunes are well known for supporting healthy digestion. They help regulate your system, reduce bloating, and prevent constipation. Plus, they’re a light, nutrient-dense snack—perfect to keep in your bag or use in a delicious dessert like this French-style clafoutis. It’s ideal for picnics or gatherings!


Ingredients (serves 4):

  • 1 cup pitted prunes (dried plums)
  • ½ cup dark rum
  • ½ cup packed brown sugar
  • 1 tablespoon vanilla extract
  • 1½ cups all-purpose flour
  • 3 large eggs
  • 2 cups whole milk
  • Pinch of salt
  • Butter or nonstick spray, for greasing the pan

Instructions:

  1. Place the prunes in a shallow bowl and cover with the rum. Let them soak for at least 1 hour—or ideally overnight—for maximum flavor.
  2. In a large mixing bowl, combine the brown sugar, flour, salt, and vanilla extract. Stir until evenly mixed.
  3. Add the eggs one at a time, whisking constantly to avoid lumps.
  4. Gradually pour in the milk while continuing to whisk, creating a smooth, pourable batter.
  5. Preheat the oven to 350°F. Grease a baking dish (about 9 inches) with butter or nonstick spray.
  6. Arrange the soaked prunes on the bottom of the dish. Pour any remaining rum into the batter and stir.
  7. Pour the batter over the prunes. Bake for 1 hour, until the pudding is set and golden on top.
  8. Allow to cool completely and rest for at least 3 hours before serving—this helps it firm up.

Tip: Serve at room temperature with a dusting of powdered sugar or a dollop of whipped cream for an extra treat.
