Tuna-Stuffed Tomatoes

One of the star ingredients of the Mediterranean diet is the tomato: fresh, flavorful, and packed with vitamins and minerals. Thanks to its high lycopene content, it helps prevent premature aging, fights bad cholesterol, improves circulation, and is a fantastic anti-inflammatory thanks to its vitamin C. Tomatoes shine in salads, sauces, soups—and just about anything you can imagine. For a light yet satisfying summer starter, try these tuna-stuffed tomatoes.


Ingredients (serves 4):

  • 5 oz canned tuna in water (drained)
  • 4 medium tomatoes
  • 2 hard-boiled eggs
  • 3 tablespoons light mayonnaise
  • 2 tablespoons chopped fresh parsley
  • 1 small garlic clove, minced
  • Salt and pepper, to taste

Instructions:

  1. Wash the tomatoes, cut them in half crosswise, and carefully scoop out the insides.
  2. Place the tomato pulp in a blender with half of the minced garlic. Blend until smooth to make a light tomato purée and set aside.
  3. In a mixing bowl, flake the drained tuna and combine it with the tomato purée and grated hard-boiled eggs. Stir in the light mayonnaise and season with salt and pepper.
  4. Fill the hollowed tomatoes with the tuna mixture and refrigerate for at least 1 hour to allow the flavors to meld.
  5. Serve chilled, garnished with chopped parsley.
