Ingredients (for 4 servings):
3 lb beef short ribs
2 tbsp olive oil
1 onion, chopped
3 carrots, chopped
3 garlic cloves, minced
2 cups leftover red wine
2 cups beef broth
2 sprigs thyme
Salt and pepper, to taste
Instructions:
Preheat oven to 325°F. Season ribs with salt and pepper.
In a Dutch oven, sear ribs in oil until browned. Remove and set aside.
Sauté onion, carrots, and garlic. Add wine, scraping browned bits.
Return ribs, add broth and thyme. Cover and braise 2 ½–3 hours until tender.
