Ingredients (1 galette, 6–8 servings):
1 store-bought pie crust
2 cups pumpkin, peeled and cubed
1 onion, thinly sliced
1 tbsp olive oil
1 tsp fresh thyme (or rosemary)
1/2 cup crumbled feta cheese
Salt and pepper, to taste
1 egg (for egg wash)
Sesame seeds, to sprinkle
Instructions:
Preheat oven to 400°F. Roast pumpkin cubes on a baking sheet with olive oil, salt, and pepper for 20 min. until tender.
Meanwhile, caramelize the onion in a skillet over low heat until golden and soft.
Place pie crust on a parchment-lined baking sheet. Spread pumpkin and onion mixture in the center, sprinkle with feta and herbs, leaving a 2-inch border.
Fold the crust edges over the filling, and brush with egg wash. Sprinkle sesame seeds around the edges.
Bake 35–40 min. until the crust is golden and flaky.
