Ingredients (1 galette, 6–8 servings):

  • 1 store-bought pie crust
  • 2 cups pumpkin, peeled and cubed
  • 1 onion, thinly sliced
  • 1 tbsp olive oil
  • 1 tsp fresh thyme (or rosemary)
  • 1/2 cup crumbled feta cheese
  • Salt and pepper, to taste
  • 1 egg (for egg wash)
  • Sesame seeds, to sprinkle 

Instructions:

  1. Preheat oven to 400°F. Roast pumpkin cubes on a baking sheet with olive oil, salt, and pepper for 20 min. until tender.
  2. Meanwhile, caramelize the onion in a skillet over low heat until golden and soft.
  3. Place pie crust on a parchment-lined baking sheet. Spread pumpkin and onion mixture in the center, sprinkle with feta and herbs, leaving a 2-inch border.
  4. Fold the crust edges over the filling, and brush with egg wash. Sprinkle sesame seeds around the edges.
