A peach plum galette combines the juicy sweetness of peaches with the tart depth of plums for a dessert that feels both rustic and refined. The fruits bake into a jammy, jewel-toned filling that contrasts beautifully with a golden, flaky crust. With just a hint of sugar and spice, the natural flavors of the fruit truly shine. This galette is simple to prepare but elegant enough for any gathering.
Ingredients (for 1 galette, 6–8 servings):
1 store-bought pie crust
2 cups peaches, sliced
2 cups plums, sliced
1/3 cup sugar
1 tbsp cornstarch
1/2 tsp cinnamon
1 tsp lemon juice
1 egg (for egg wash)
1 tbsp coarse sugar (for sprinkling)
Instructions:
Preheat oven to 400°F. In a bowl, mix peaches, plums, sugar, cornstarch, cinnamon, and lemon juice.
Roll out the pie crust on parchment paper and spoon the fruit mixture into the center, leaving a 2-inch border.
Fold crust edges over fruit, pleating as you go. Brush edges with egg wash and sprinkle with coarse sugar.
Bake 35–40 min. until the crust is golden and the filling is bubbling.
Cool slightly before serving warm or at room temperature with whipped cream.
