Ingredients (for 2 servings):
8 oz fettuccine
2 tbsp butter
2 cups sliced cremini mushrooms
2 cloves garlic, minced
½ cup heavy cream
¼ cup grated Parmesan
Salt and pepper, to taste
Fresh parsley, for garnish
Instructions:
Cook pasta in salted water until al dente. Reserve ½ cup pasta water; drain and set aside.
In a large skillet, melt butter over medium heat. Add mushrooms and cook until browned, about 8–10 minutes.
Stir in garlic and cook for 1 minute.
Reduce heat and add cream. Simmer for 3–4 minutes, then stir in Parmesan.
Toss pasta with sauce, adding reserved water if needed. Season with salt and pepper, and top with parsley.
